FONDUE WITH DUTCH CHEESES



INGREDIENTS
  • 450 g Edam or Gouda cheese, grated
  • 150 ml dry white wine
  • 1 clove of garlic, crushed
  • 1 tsp lemon juice
  • 2 tbsp chopped parsley
  • 2 tbsp sherry
  • 1 tbsp cornflour
  • pinch of paprika
  • pinch of chili pepper
  • French bread cubes for serving.
1) Place wine, garlic, parsley and lemon juice in the fondue pot or a small saucepan, stir and add the grated cheese.
2) Place the pot or saucepan on the hob at a LOW heat and cook until the cheese melts, stirring occasionally.
3) Mix cornflour with sherry to make a smooth paste in a small bowl. Add paprika and chili pepper.
4) Stir in the cornflour mixture into the pot with the cheese.Stir and take off the heat when it begins to bubble.
5) Serve immediately with cubes of french bread.

NOT: Slow cooking gives the best result in fondue making. If it is on high heat the fondue will be spoiled.
Some other cheeses which are good for melting and making fondue are: Emmental, Gruyere, Parmesan, Cheddar, blue cheeses and Camembert.

TOP 10 ANTI AGING TIPS




1) DRINK TEA : Tea is full of antioxidants and therefore anti ageing. Black tea is just as good as green tea as far as the health benefits go. Black tea is simply green tea leaves that have been dried and heated to change the colour and the taste. Both black and green tea are stronger in almost equal amount of antioxidants.
If you drink tea with your meals, it helps neutralize cancer causing compounds.
2) EAT SOYA BEAN FOODS: The soybean contains many antioxidants to deter certain type of cancers. Eat them at least 2-3 times a week.
3) EAT FRUIT AND VEGETABLES: These contain the greatest amount of antioxidants. Eat as many fruit and veg you can at least 5 servings a day. Frozen vegetables are just as good as fresh.
4) EAT FISH: Oily fish such as sardines, salmon, herring, tuna and mackerel are the best source of omega 3 and they have the most anti aging fatty acids. Try to eat at least 2-3 times a week. Tinned fish is good as an alternative to fresh fish.
5) EAT GARLIC: Garlic is the most ancient antioxidant. A clove a day raw or cooked is a sufficient amount of anti aging dose. It helps to prevent cancer, heart and brain diseases.
6) LIMIT SWEETS: Eating excessive amount of sugar and fructose raises insulin levels damaging arteries, as well as causing weight gain and other diseases.
7) CUT DOWN ON ALCOHOL: Drinking moderately no more than one or two glasses per day is the sensible amount. Red wine contains various antioxidants from the grapes.
8) HAVE LESS MEAT: To avoid harmful free radicals, restrict meat and and choose better ways of cooking them. Steam, boil and roast rather them rather than fry and barbecue the meat if possible.
9) RESTRICT BAD FATS: Avoid animal fats, dairy fats, margarine, vegetables fats and processed foods.
10) RESTRICT CALORIES: Eat only enough calories for optimum nutrition to enjoy the foods we like.

VEGETARIAN BULGAR WHEAT KOFTE ( etsiz cig kofte )


INGREDIENTS
  • 2 cups fine bulgur ( bulgar ) wheat
  • 1 onion
  • 4- 6 cloves of garlic
  • 5-6 sun dried tomatoes, diced finely
  • 2 cooked potatoes, mashed
  • 2-4 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tbsp pepper paste ( optional )
  • bunch of parsley, chopped
  • cumin, chilli pepper flakes, salt and pepper.
METHOD

1) Wash the bulgur in cold water and drain. Set aside.
2) Place onion, garlic, sun dried tomatoes in a food processor and pulse it a few times. (or grate onion, garlic and tomatoes by hand and mix everything well to make this dish.)
3) Add the oil, mashed potatoes, bulgur wheat into the food processor. Mix in the tomato paste, pepper paste, parsley, cumin, chilli, salt and pepper. Pulse it several times until it all bind together. Add sprinkle of cold water if needed to form a stiff mixture.
4) Shape them into little sausages by hand and serve them on bed of lettuce leaves.

CHICKEN MARINATED IN YOGURT SAUCE



This is my quick and tasty recipe for chicken legs. You can use chicken thighs or chicken breast if you prefer it. Today I served the chicken with roasted winter vegetables and baked potatoes but very good served with rice, pasta or with just a simple salad.

YOU NEED
  • 8 chicken drum sticks
  • 5 tbsp natural yogurt
  • 2 tbsp tomato paste
  • 2-4 cloves of garlic, crushed
  • 2 tsp olive oil
  • 2 tsp balsamic vinegar or normal vinegar
  • 2 tsp mixed dried herbs
  • 2 tsp paprika
  • 1 tsp chili pepper
  • Salt and pepper to taste.
1) First wash chicken pieces and drain.
2) mix the marinade: Mix yogurt and tomato puree. Add the crushed garlic, oil and vinegar.
3) Add the herbs, spices , salt and pepper. Mix well.
4) Pour the marinade over the chicken, cover with cling film and keep it in the fridge preferably overnight. ( if you don't have time, minimum 2-4 hour will be fine )
5) Cook the chicken pieces in preheated oven ,190 C for 45 minutes to one hour.

GREEN BEANS WITH TOMATOES AND HERBS


This is another vegetarian dish which is enjoyed in summer months made with olive oil. It is generally served cold as a side dish.  In Turkey people prepare these vegetables dishes cooked in olive oil and fresh tomatoes in advance and keep them the fridge as standby for meal times. These dishes traditionally served after the meat dish and before the rice but can be served as meze or side dish. 

YOU NEED
  • 500 g stringless beans
  • 2-3 tbsp olive oil
  • 1 onion, chopped finely
  • 1-2 clove of garlic, diced
  • 4-5 medium fresh chopped tomatoes or can of tomatoes
  • pinch of sugar
  • handful of chopped fresh parsley and dill
  • salt and ground black pepper.
1) Trim the beans and cut them into small pieces. Wash and set aside.
2) Fry chopped onions in the olive oil until lightly brown. Add the tomatoes, garlic, sugar, beans and stir.
3) Bring it to boil on the stove then turn the heat to very low and cook the beans with the lid on for 20-25 minutes.
4) You don't need to add any water to this dish but if it is going dry just add splash of water.
5) When it is nearly cooked, season with salt and pepper and sprinkle with fresh chopped herbs just before serving.

MEZE DISHES


Here are some selection of Turkish meze's  which can be served as a snack, as an appetizer or to accompany the drinks. These are great to spread over bread and served as a starter.

EZME
  • 4 medium tomatoes, chopped
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1 chili pepper, chopped
  • handful of fresh parsley, chopped
  • 2 tbsp olive oil
  • squeeze of lemon juice
  • salt and black pepper 
Place all the chopped ingredients in a food processor and pulse it 2-3 times until all mixed together or chop all the ingredients very finely then mix in a bowl.
Add the olive oil, lemon juice, salt and pepper to taste before serving.

YOGURT AND CUCUMBER
  • 1 tub of natural yogurt
  • half a cucumber, diced
  • 1 clove of garlic, 
  • pinch of dried mint
  • salt to taste
Crush the garlic with salt. Chop the cucumber to small pieces. 
Mix yogurt with garlic and diced cucumber. Season with mint and salt before serving.

CHICKPEA PUREE WITH TAHINI AND YOGURT
  • 2 cups cooked and drained chickpeas
  • 1 clove of garlic, crushed
  • 1/2 cup runny tahini
  • 1/2 cup natural yogurt
  • 1 tbsp fresh dill, chopped finely
  • squeeze of lemon juice
  • salt
  • pinch of paprika
Place the chickpeas in to a mortar and pestle to pound or into a food processor  and blend until it is smooth. Add the garlic and the rest of the ingredients and mix well to bind. Sprinkle with paprika just before serving.

AUBERGINE AND CREAM FRAICHE
  • 1 aubergine
  • 2 tbsp cream fraiche
  • 2 tbsp natural yogurt
  • 1 tbsp fresh parsley, chopped finely
  • salt and ground black pepper.
Cook the aubergine whole  under the grill, turning frequently making sure it is cooked and the flesh is soft.  Peel of the skin under running cold water and diced the flesh finely.Mix with the rest of the ingredients with aubergine pulp. Add cream fraiche, yogurt and parsley. Season with salt and ground black pepper just before serving.

CILBIR ( Poached egg in garlic yogurt )



Hi all, this is  a simple yet tasty dish which is great as a starter, side dish, hot meze or snack at any time of the day. In Turkish cooking, natural yogurt used and  served with many dishes including, vegetables, rice dishes, kebab dishes, cacik( cucumber, garlic, dill yogurt mixture), as a desert, and very popular, national cooling  summer drink" Ayran". One other  popular way of serving yogurt is with crushed garlic. Yogurt is the  part of Turkish culture and has been made at home  by our mothers for centuries but  nowadays, different variety of yogurts and ayrans available in the shops, widely all over Turkey.

YOU NEED
  • 1 egg 
  • 1 cup water
  • 2 tsp vinegar
YOGURT DRESSING
  • 4-5 tbsp natural yogurt
  • 1 clove of garlic, crushed
  • salt and pepper
TO SERVE
  • 2 tsp butter or oil
  • 1 dried red peeper or pinch of paprika.
1) Place the vinegar with the water in a pan and bring it to boil. Crack the egg in the water, turn the heat to low and poach the egg for 3-4 minutes with the lid on. 
2) Mix crushed garlic with the yogurt. Add salt and pepper to taste.Spoon  the yogurt into the serving dish. Lift the egg out of the water with slotted spoon and place it on the yogurt.
3) Heat butter or oil in a frying pan add the chopped dried peppers or paprika quickly and spoon over the egg. Serve immediately. Serves 1.

NOT:  Frying  the egg rather than poaching, is another nice way of serving cilbir.

AYRAN
  • 2 cups of natural yogurt
  • pinch of salt
  • cold water
Whisk the yogurt, cold water  and salt together in a blender until it is smooth and frothy. Add more salt if needed and serve cold.

SPICY MUSHROOMS with sumak ( Baharatli mantar )



This spicy mushroom dish is  great for lunch over toast with some salad or serve it as a side dish to accompany a main meal. This recipe serves 1, but the ingredients can be doubled to serve 2 or more.

YOU NEED
  • 1 spring onion or 1 tbsp onion, finely chopped
  • 1 tbsp olive oil
  • 1 tsp cumin seeds
  • pinch of chili pepper
  • 100 g button mushrooms
  • 1 clove of garlic, diced finely
  • 5 tbsp water or vegetable stock
  • 1 tbsp fresh parsley, and mint, chopped finely
  • salt to taste
  • Sumak for sprinkling and lemon slices
1) First wipe the mushrooms and leave them whole. No need to wash them. Brown the onion in olive oil in a non stick frying pan.
2) Add cumin seeds, chili pepper, mushrooms and garlic. Stir and add the water. Cook on low heat for 5-7 minutes or until all the juices absorbed. Add the fresh herbs and salt. Turn the heat off.
3) Sprinkle with pinch or two of sumak and squeeze of lemon juice before serving.

COOK'S NOTE : You can use pinch of dried herbs instead of 1 tbsp of fresh herbs. Also pinch of cumin powder to replace 1 tsp of cumin seeds, if the cumin seeds are not available.

FISH PILAKI ( BALIK PILAKISI )



This dish traditionally is made with firm fleshed whole fish but I used  smoked and white fish chunks as I had them in my fridge. Mixture of smoked and white fish worked very well for  this recipe. Cod or any other white fish can be used instead of haddock.

INGREDIENTS
  • 1  large carrot
  • 2 medium potatoes 
  • half a cup water or stock
  • 150 g smoked haddock ( 2 medium  fillets )
  • 100 g haddock ( 1 medium fillet )
  • 1 red onion, chopped
  • 2-3 tbsp olive oil
  • Half a tin of tomato with tomato juice
  • 2 cloves of garlic
  • pinch of hot pepper or half of green chili pepper
  • 3-4 bay leaves
  • bunch of dill, chopped
  • juice of half a lemon
  • freshly ground black pepper
1) Peel and cut the potatoes and carrot into small chunks. Place them into a pan with some water just to cover the vegetables. Bring it to boil and cook the veg on high heat for about 5 minutes.
2) In the meantime wash the fish and cut into chunks. Set aside.
3) Saute the onions  in olive oil until just turning brown, add tomatoes, garlic, chili pepper, bay leaves.
4) Arrange the  chunks of fish over the vegetables, then pour the onion and tomato mixture over the fish. Sprinkle chopped dill, lemon juice and black pepper. Cook on low heat for 10- 12 minutes with the lid on. Do not stir.
5) Serve with extra dill and crusty bread. Serves 2.

NOT : I didn't add any salt to this dish as the salt from the smoked fish was just enough.

YUVARLAMA


These little meatballs are my favourite as it is my childhood food. My mam used to make these so it always brings back happy memories.

YOU NEED
  • 500 g lean mince
  • 1 onion, chopped finely
  • 1 cup fine bulgur
  • 1 egg
  • Parsley, handful, chopped
  • salt and pepper
  • 2 tbsp flour
  • salted water
  • 2-3 tbsp butter or olive oil
  • 1-2 cloves of garlic, crushed
  • Fresh parsley.
First mix mince, onion, bulgur, egg and parsley either in a food processor or by hand until it is bind well. Add little salt and some black pepper and work to bind it for couple of minutes more. Then take little pieces  about a size of a hazelnut and roll them to a  round shape. Place them on a plate with flour, so they wont stick. Take a dip pan and boil some water, say half full. Add some salt. When the water boils add the meat balls. Turn the heat to medium and cook the yuvarlama for about 10-15 minutes. Make sure the water totally covers the meat balls. Drain them, set aside to cool. Reserve the water.
Just before serving, heat the butter in a nonstick frying pan, add the meatballs and the garlic and give it a quick stir or a minute or two. Decorate with parsley and serve with rice and salad.

NOTE : You can use the reserved water of the yuvarlama as a sauce over them or you can use it as a base for any soup for the next day.

MERCIMEKLI VE NOHUTLU PILAV ( PILAV WITH LENTILS AND CHICK PEAS )


HI ALL,  this again a very tasty complete vegetarian meal which is very quick to make. Hope you enjoy...

YOU NEED
  • 1 onion, chopped,
  • 2-3 tbsp olive oil
  • 1 tbsp pepper or tomato paste( puree)
  • 1 clove of garlic ( optional )
  • 1 tsp chili pepper (optional )
  • 1 cup red lentils
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped peppers
  • 1/2 a cup bulgur wheat or rice
  • 1 cup cooked chick peas
  • 3- 4 cups hot water.
  • fresh or dried herbs of your choose
  • salt and black pepper
METHOD

First prepare all the vegetables and chop them finely. Wash the lentils,  rice, chick peas and set aside. Fry the onion in the oil for 5 minutes, then add the garlic, tomato paste, tomatoes and peppers. Cook for couple of minutes. Add the lentils, rice and chick peas together with herbs, water, salt and chili pepper. Use 3 cups of water first then add the rest of the water as it cooks. Add more or less to suit your taste. I like to serve this dish  with the constancy like risotto or even more mushier but you can cook and serve it more like a rice dish if you like by using  less water.
Add more herbs and ground black pepper just before serving.

CHICKEN BREAST WITH FRESH TOMATOES


This dish was cooked with organic chicken and fresh tomatoes and and fresh peppers which tasted quite delicious. I served it with Turkish round rice which is fried with some butter first then cooked with chicken stock.

YOU NEED
  • 4 pieces of chicken breast, diced
  • 2 tbls olive oil
  • 1 large onion, chopped finely
  • 1 clove of garlic ( optional )
  • 5-6 medium tomatoes, chopped
  • 2-3 tblsp full of  green peppers, diced
  • 1 cup stock stock or water
  • Salt and black pepper
  • fresh parsley and dill, chopped
METHOD

First wash and dry the chicken then dice into small pieces. Fry in a non stick pan with the oil for 5 minutes. Add the onion and garlic and fry for further 5 minutes. Then add the tomatoes,  peppers and the stock, cover and simmer for 20-30 minutes or until it is cooked. Season with salt and pepper and garnish with fresh herbs just before serving. Serves 4.

SCALLOPS & PRAWNS WITH CARAMELIZED ONIONS


INGREDIENTS

  • 12-15 scallops
  • 1 tbsp butter
  • 1 fat glove of garlic
  • 1 shallot or small red onion
  • pinch of sugar
  • dash of water or white wine
  • 50 g prawns, defrost if frozen
  • 1 tbsp chopped parsley
  • salt and ground black pepper
  • Mix green salad to serve.
METHOD

Chop the onion finely and fry in a non stick pan with the butter until it is nearly going brown. Add little sugar, mix it with the onion to caramelize. Add the scallops, stir and cook each side for 1 minute. Add little olive oil if needed while cooking the scallops. Pour dash of wine or water. Stir the prawns in and cook for further 2 minutes. Season with salt and pepper and chopped parsley. Serve it on a bed of crispy green salad. Serves 2.

CHILLI BEEF WITH BEANS (acili kiymali fasulye)


This is simple yet tasty supper dish to be enjoyed with family and friends and it can be prepared in advance. Serves 2.

INGREDIENTS
  • 2 medium potatoes, diced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 150-200 g minced beef
  • 1 glove of garlic, diced
  • 10 cherry tomatoes
  • 3 tbsp kidney or white beans, canned
  • Little cold water
  • 1 tbsp chopped parsley
  • salt and hot chilli pepper to garnish.
METHOD
Dice and fry the potatoes in oil for about 10 minutes on a medium heat, until they are golden. Transfer the potatoes to the serving plate. Add the chopped onion to the pan, add more oil if needed and stir fry onion for 5 minutes. Then add the mince, garlic, stir. Mix the mince with a wooden spoon during cooking to break up any lumps in the meat. Cook for 7-10 minutes. Add the tomatoes, drained and washed beans and salt. At this stage add a little water to the pan to prevent it sticking. Stir and cook for further 5 minutes. Bring the potatoes and mix them in the pan with the mince mixture. Turn the heat off. Add the parsley and some flakes of red chilli pepper just before serving. Afiyet olsun.

SMOKED SALMON WITH TREAD EGG NOODLE( sehriyeli somon)

This is a light yet filling dish so I served it for lunch . Can be served as a STARTER. Serves 2
YOU NEED
  • 4 slices of smoked salmon
  • Juice of half a lemon
  • 150 g low fat cottage cheese
  • 50 g brie cheese, diced finely
  • 1 clove of garlic, crushed
  • 1 tbsp fresh dill and parsley
  • Pinch of chilli powder
  • 150 g cooked tread noodle
  • 1 shallot or spring onion, chopped finely
  • 2 medium mushroom, diced finely
  • 1 egg, whisked
  • salt and black pepper
  • Some olive oil for frying

METHOD

Squeeze the lemon juice and pour over the salmon slices. Set aside. Combine the cottage cheese, brie, garlic, herbs and chilli powder in a small bowl, mix well. Set aside. Mix chopped onion, mushrooms and whisked egg with the noodles. Season with salt and pepper and mix it well to combine. Heat some olive oil in a large non stick frying pan. Place 4 portions of the noodle mixture and flatten them with a spatula. Fry the noodle patties on medium heat for about 5-6 minutes each side or until they are browned and crispy. Then drain them on absorbent paper.
Divide the patties on two serving plates, top with the cottage and herb mixture. Finally top with the salmon slices. ENJOY...

MUSSELS IN GARLIC&LEMON (Limon ve sarimsakli Midye)

This dish is very good as a starter but I served it with spicy rice as it is a tradition in Turkey to serve mussels with rice. Serves 2

YOU NEED
  • 10 or 15 cooked mussels
  • Some home made or ready made garlic butter
  • 1 tbsp parsley, chopped finely
  • Juice of half a lemon
  • 1 tsp cinnamon
  • 1 slice of stale bread crumbs
  • salt and black pepper to taste
METHOD
Mix garlic butter with parsley, lemon juice, bread crumbs, cinnamon, salt and pepper. Divide the mixture and top each mussel pressing firmly. Preheat the grill. Grill the mussels on medium heat for 8-10 minutes or until all the mussels nice and crispy. Serve it immediately.

KOFTE WITH TOMATO SAUCE ( Salcali kofte )

YOU NEED
  • 400 g steak mince
  • 1 shallot, chopped
  • 1 clove of garlic, diced
  • 1 tsp cumin powder
  • 1 tsp black pepper
  • 1 tsp salt
  • Plain flour to coat the koftes
  • Some oil for frying the koftes
FOR THE SAUCE
  • 1 small onion, chopped finely
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • Handful of fresh parsley, chopped
  • Enough water to cover the koftes
  • Salt and pepper to taste
  • More parsley for serving
METHOD
First chop the shallot or small onion and the garlic finely. Add to the mince together with cumin powder, salt and pepper. Mix it well by hand or pulse it in a food processor until all mixed together. Then take the pieces of the mixture about a teaspoon at a time and roll each into a small round. Coat each kofte with flour then brown them in the oil in a large frying pan. When the koftes browned transfer them to a plate.
Prepare the sauce in the same frying pan with remaining juices. Add more oil if necessary to fry the onions first, then add the tomato paste some water, parsley, salt and pepper. Bring the sauce to boil and simmer for 2-3 minutes. Now add the koftes into the simmering sauce add more water to cover the koftes. Cover the pan and simmer gently for 10-15 minutes. Sprinkle with some more parsley just before serving. Serve with rice and salad. Serves 4.

CHICKEN KEBAP WITH MARINADE (Yogurt ve tahin soslu tavuk sis)

Hi all, overnight marinade makes the kebabs very tender and soft. But If you don't have time marinate for 1-2 hours or just brush the marinade mixture over the meat while grilling. Serves 4

YOU NEED
  • 4 chicken breasts, cut in to cubes
FOR MARINADE
  • 4 Ttbsp natural yogurt
  • 1 tbsp tomato paste
  • 1 tbsp tahini
  • 2 tbsp olive oil
  • 1 red onion, chopped finely
  • 2 cloves of garlic, crushed
  • 2 tsp paprika
  • 2 tsp mix spice
  • 1 tsp chilli powder
  • 1 tsp dried mix herbs
  • 1 tsp salt
METHOD

Wash the chicken pieces , dry on kitchen paper and cut in to cubes. Prepare the marinade by chopping the onion, garlic and mixing in to a smooth paste with the rest of the ingredients. Marinate meat minimum 2 hours. Then grill or cook on griddle until it is cooked through and crispy. Serve with bulgur pilav and cacik.
CACIK

Chop some cucumber and fresh mint. Crush one clove of garlic. Add them to natural yogurt. Season with salt and paprika just before serving.

TROUT WITH HOME MADE HERB SAUCE(Meze soslu balik)

This is a sauce freshly made with fresh mixed herbs combined with olive oil, garlic and yogurt and is lovely with added tangyness from the lime juice.

YOU NEED
  • 2 trout
FOR HERB SAUCE
  • 50 g mixed fresh herbs of dill, parsley,mint and thyme,chopped
  • 1 clove of garlic, diced
  • 2 tsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp roasted sunflower seeds
  • 3 tbsp natural yogurt
  • pinch of salt and chilli powder
  • Extra 1 tbsp of sunflower seeds for sprinkling.
Grill or barbecue the fish until the skin turns crisply brown for about 3-5 minutes each side. Transfer on to a serving plate.
Make the sauce either in a blender or in a large pestle and mortar, until it is nice and smooth. Pour the sauce over the fish and sprinkle some sunflower seeds just before serving. Serves 2
NOTE: If you are using the pestle and mortar, first pound the herbs, garlic, sunflower seeds to a paste. Slowly add the oil, salt, chilli powder and lime juice. Mix in the yogurt just before serving with the sprinkle of extra sunflower seeds.

BULGUR PILAV WITH AUBERGINES ( patlicanli bulgur pilavi )

INGREDIENTS
  • 200 g bulgur wheat, coarse
  • 2- 3 tbsp olive oil
  • 1 red onion, chopped
  • 1 aubergine, diced
  • 1 small pepper, chopped
  • 4 medium tomatoes,diced
  • 2 garlic cloves, crushed
  • 1 tsp cinnamon
  • 1 tsp coarse ground black pepper
  • 2 tbsp tomato puree
  • 500 ml stock or hot water
  • Handful of chopped parsley and dill
  • Salt

METHOD

First wash the bulgur, drain and set aside. Fry the onion in olive oil until it is brown. Now add the aubergine, pepper, tomatoes, garlic. Cook for 5 minutes stirring. Add bulgur, cinnamon, black pepper, tomato puree. Stir and pour hot water. Add herbs, salt and bring it to boil. Replace the lid and simmer on low heat for 20-25 minutes until the rice is cooked. it is very tasty either hot or cold. Serve with meat, vegetables and with salads when cold. Serves 4-6

NOTE

This pilav dish is creamy in texture like in risotto.
